Culinary Arts- Grilling
Process
1. Do your research and practice. A great Grill Chef is knowledgeable about his recipes and meats. The combination of flavors and modifying an existing recipe for you to hook the taste buds of the diners is imperative
2. Study and understand the recipes and methods. Comprehend the recipe particularly the methods on how to cook the perfect steak and/or other meats.
3. Production. Make good use of your time. Plan your methods by carrying the basic mise en place including the standards of sanitation and apply it in your output. The Executive Chef is very critical on these areas.
You have to produce the following in exactly a half hour:
Bone-in-ribeye- Rare
Grilled Salmon- Medium well
New York Steak Medium Rare
4. Defending your output. Please write a short description of each item that you will be re-creating to avoid much questioning on the evaluation procedure by the Executive Chef. Keep all of this in less than two pages. Please do not exceed two and a half pages.
