I created with webquest with middle and  high school level students in mind.  Although this requires a couple of days outside of the gymnasium, it will help develop other 21st century skills that your students need.  Also, once the research section is complete, they will be actively creating their workout plans which will require them to be testing exercises.
I suggest planning two and a half weeks (14 days) for completion of this project.  A day and a half for organizing groups and roles, and research.  A day for exchanging and sharing information within their original groups.  A day and a half for creating the workout plan, and 10 days to use their workout plan.  The students will need a day for completing the 5 tests on two separate occassions.  Then they will need a couple days to compare data and finish making the project.
You will select the original group members.  Once the original groups are established, the students will take responsibility for delegating the workload.  You will take on the role of a support system, instead of leader.  Allow students time to answer their own questions before you step in to help.  Give them guidance, but allow them to explore.  You will need to be able to assist with Excel, and other computer based project programs.
